First Chili of the Year

So I’m making the first chili recipe of the year and because we are on a healthy diet it going to be a Turkey chili recipe.

I may have to heat it up some with the home made chile pepper flakes i made though. Good thing its a cool day here and it looks like it may rain some. Still waiting for my Supper Hot Ghost Peppers and my Trinidad Scorpion Peppers to produce some of the hottest peppers in the world.

Hottest Chili in the World

So i have a new web site call Hydroponic 411 and i have been talking alot about the worlds hottest chile peppers. The Trinidad Scorpions and the Ghost Peppers. Right now all of my pepper plants are just seedlings but when they mature i intend to make the hottest chili recipe in the world and have a contest. Chili Lite Recipe

So its the new year and we are all looking to put a new years resolution into place. Mine this year is to get lighter in weight and to do that i am going to up my game with a liter version of my chili recipes. So to do that lets take a look at what we can do to cut those calories and fat.  First on the list is the meat that we use to make our chili recipe. There are two steps here to cut fat and calories; 1 use a leaner grade of beef and less of it, 2 Use ground chicken or turkey instead of beef. That about does that up because that is the only place that you get any real calories from chili. You can add more beans to get more protein and fiber into it but other than that chili should be a diet food. So clean up you chili recipe and get lighter this year. To that end i have created a new web site that is all about eating healthy so go check it out.

No bean Chili recipe hype

Well the home made beer and chili party was a great hit this year. It was the first of what i hope to be a yearly event. Only thing was i had one upset contestant that complained that he should have won because every one else had beans in there chili and real chili has no beans. Well i said if that is the case then why did 12 others all have beans in theirs. So photo shopped an award certificate for him that said first place out of 1 for no bean chili recipe.

So next year i guess i will have to add a No Bean Chili recipe category to the contest.

Super Bowl Chili is Here

Its that time of year again and the pots and slow cookers have been dusted off and prepared for the big day.

I’m again looking for a new and great Super Bowl of Chili to server at this years game day party. Last years was great and i expect the one i cook up this year will be too. So dust of those recipes and submit them here.

Slow Cooker Beef Chili

Here is a super bowl slow cooker beef and black bean chili recipe. But you don’t have to wait for the super bowl to serve this one up. This chili recipe is a great meal anytime for the family.

Ingredients:

1 1/3 lbs extra lean ground beef

1 large sweet onion, diced

1 red bell pepper, diced

2 large cloves garlic, minced

1 small can (4 ounces) chopped mild green chile peppers

2 cans (14.5 ounces each) diced tomatoes

1 can (8 ounces) tomato sauce

1 1/2 teaspoons chili powder

1/2 teaspoon ancho chile powder or more chili powder

1/2 teaspoon ground cumin

1/4 teaspoon leaf oregano

cayenne pepper to desired heat optional

1 can (15 ounces) black beans, rinsed and drained

salt and pepper, to taste

Preparation:

Brown your ground beef with the onions and bell pepper. Then throw all of the ingredients into your slow cooker set at low for about 6 hours. I can’t make it any easier than that. The only thing is you have to start it early enough to be ready for the game. But then you can always cook it up the day before which is just as good.

Chili Recipe Tip: if you are trying to cut down on fat cook it up the day before and up it in the refigerator over night. All of the fat will come to the top and harden. Then all you have to do is use a wooden spoon to lift the hard fat out. Reheat and server it up with out all those fat calories.

Superbowl Chili Recipe

It’s getting close to that time of the year when we will start prepping for that big Superbowl party. Now is the time to get your Superbowl Chili Recipe game on. Dust of that recipe card and start practicing for the big day.

If you have a speical Superbowl day chili recipe please share it with the rest of us. I will make them all and have a pannel of coworkers give them a try and rank them. So send them in and see which one of you takes first place on the big day.

Presidential Chili Recipe

Well what ever your politics are you got to give it to a president that makes his own chili. So how does that work ? Do presidents have their own private kitchen or do they have to go down to the main white house kitchen and say “I’m here to cook my Presidential Chili Recipe” Any way here is a chili recipe from President Obama.

Chili Recipe Ingredients:

1 large onion, chopped

1 green pepper, chopped

Several cloves of garlic, chopped

1 tablespoon olive oil

1 pound ground turkey or beef

1/4 teaspoon ground cumin

1/4 teaspoon ground oregano

1/4 teaspoon ground turmeric

1/4 teaspoon ground basil

1 tablespoon chili powder

3 tablespoons red wine vinegar

Several tomatoes, depending on size, chopped

1 can red kidney beans

Saute onions, green pepper and garlic in olive oil until soft.

Add ground meat and brown.

Combine spices together into a mixture, then add to ground meat.

Add red wine vinegar.

Add tomatoes and let simmer, until tomatoes cook down.

Add kidney beans and cook for a few more minutes.

Serve over white or brown rice. Garnish with grated cheddar cheese, onions and sour cream.

Chili Dog Throw Down

Just watched a food network show about chili dogs and the different type of chili used for them. It was interesting to see that the winner used Beef Hearts in their chili recipes. I just have an aversion to parts being eaten but they did win and when customers where asked about 90% of them had no idea that beef heart was in the chili. So i guess that is a good reason to keep those secret ingredients secret.   So tune back in to find some chili recipes for dogs.

Chili Pie

Chili pie is one of the chili recipes that seems to get over looked but is great for those football party’s where you want to keep food to single dishes. With regular chili you have chili and then some sort of crackers that you have to manage. With chili pie its all in one.
So start with your favorite chili recipe or go out and buy a prepared chili and move on from there.
Ingredients:
1 cup all-purpose flour
1 cup cornmeal
3 tablespoons sugar
2 teaspoons baking powder
3 tablespoons butter, melted
3/4 cup milk
1 large egg, lightly beaten
1/2 cup shredded Cheddar cheese
1 tablespoon chopped green chili peppers, mild or jalapeno

Preparation:
Start by adding your chili to a casserole dish and moving to mixing up the batter that you are going to add to the top of it.
In a bowl large enough to hold all of the ingredients mix all of your dry parts. Then add all of the wet ingredients until it is all mix in. Add the Cheese and the chilies that prepared. Now pour the batter over the top of the chili. This will not rise much but will come up some so leave a little room on the top of the casserole disk.
Place it in your 400 deg oven for about 12 minutes and then turn down the heat to 350 deg and bake another 25 to 30 minutes until it is golden brown on top.
